When I have “almost nothing to take in,” noodles help save the working day. They’re rapidly, inexpensive, and filling, moreover they commonly only call for 1 pot. I know, I know: Not all heroes don capes.

But as significantly as I love a bowl of spaghetti, ramen, or vermicelli, I do get a small bored with creating the similar recipes time and time yet again. Which is why I was so thrilled when I uncovered Noodle Pizzas in Kathy Kordalis’ newest cookbook.

Transforming noodles into pizza is a related process to creating the Insta-popular ramen burger. Use an egg to bind collectively cooked immediate noodles, then fry the mixture in a pan or skillet to type a golden base.

From there, top the noodle base like you would any pizza and pop it into the oven. We tried 3 of Kordalis’ recommendations—chorizo, pesto, and mozzarella traditional margherita and a red sauce with spinach, chile, and egg—but really feel cost-free to experiment. I believe it would also be tasty with prosciutto and arugula, or ranch and garlic, or mushrooms and caramelized onions. You could even top your noodle base with red sauce and mini meatballs for a meta dish.

Noodle pizzas consider longer to make than normal noodle dishes, but not significantly. The particular-sized pies consider about thirty minutes to make—still acceptable for a hectic weekday or last-moment meal.

Serves 2 (or one really hungry person)

    packs immediate noodles, cooked according to the packet directions

  • one

    medium egg, beaten



  • Salt and freshly floor black pepper

  • 2

    tablespoons extra-virgin olive oil

  • one

    tablespoon passata or sun-dried tomato paste



  • handful of child spinach

  • one

    medium egg

  • one

    red chile, deseeded and thinly sliced

  • three/four

    ounce feta (optional)
